• 1 Onion
• 1 Carrot
• 1 stick Celery
• 10 Black peppercorns
• 3 Bay leaves
• 5 sprig Thyme
• bunch A small bunch of parsley stalks
• Real parsley sauce
• For the spiced figs
• 500 gram Dried figs
• 125 gram Light brown sugar
• 6 Cardamom pods
• 1 teaspoon Coriander seeds
• 1 teaspoon Mustard seeds
• 1 Small dried chilli
• For the glaze
• 1 tablespoon English mustard
• 150 gram Soft brown sugar
• 100 milliliter Rum or whisky
