Directions : French Onion Chicken Recipe

STEP 1.In a large skillet over medium heat, heat 2 tablespoons oil.

STEP 2.Add onions and season with salt, pepper, and thyme.

STEP 3.Reduce heat to medium-low and cook, stirring occasionally until onions are caramelized and jammy, about 25 minutes.

STEP 4.Stir in garlic and cook until fragrant, 1 minute more.

STEP 5.Turn off heat and remove onion mixture.

STEP 6.Wipe skillet clean.

STEP 7.In a large bowl, season chicken with salt, pepper and oregano, then toss with flour.

STEP 8.Heat remaining oil in the same skillet over medium-high heat.

STEP 9.Add chicken and cook until golden on all sides and mostly cooked through, about 8 minutes.

STEP 10.Add beef broth and return caramelized onions to the skillet.

STEP 11.Bring mixture to a boil, then reduce heat and simmer until chicken is cooked through and beef broth reduces slightly, about 10 more minutes.

STEP 12.Add cheese and cover the skillet with a lid.

STEP 13.Cook until the cheese is melty, about 2 minutes.

STEP 14.Remove from heat and garnish with parsley before serving.
