  • 3 tablespoon olive oil
  • 3 tablespoon large onion
  • 2 teaspoon freshly chopped thyme
  • As required Kosher salt
  • As required Black pepper
  • 2 cloves garlic
  • 1.75 pound boneless skinless chicken breasts
  • 1/2 teaspoon dried oregano
  • 2 tablespoon All purpose flour
  • 1.50 low sodium beef broth c
  • 1 shredded Gruyère c
  • As required Freshly Chopped Parsley

  • STEP 1.In a large skillet over medium heat, heat 2 tablespoons oil.

  • STEP 2.Add onions and season with salt, pepper, and thyme.

  • STEP 3.Reduce heat to medium-low and cook, stirring occasionally until onions are caramelized and jammy, about 25 minutes.

  • STEP 4.Stir in garlic and cook until fragrant, 1 minute more.

  • STEP 5.Turn off heat and remove onion mixture.

  • STEP 6.Wipe skillet clean.

  • STEP 7.In a large bowl, season chicken with salt, pepper and oregano, then toss with flour.

  • STEP 8.Heat remaining oil in the same skillet over medium-high heat.

  • STEP 9.Add chicken and cook until golden on all sides and mostly cooked through, about 8 minutes.

  • STEP 10.Add beef broth and return caramelized onions to the skillet.

  • STEP 11.Bring mixture to a boil, then reduce heat and simmer until chicken is cooked through and beef broth reduces slightly, about 10 more minutes.
