• 1 Medium yellow onion
• 0.75 C beef stock/broth
• 0.25 C reduced sodium soy sauce
• 0.5 C water
• 1 T worcestershire sauce
• 1 T creole or spicy brown mustard
• 2 Cloves garlic, peeled and roughly chopped
• 2 teaspoon Minced thyme
• 3 pound Chuck roast
• Salt and pepper
• 6 Sandwich rolls, or three demi baguettes, sliced into three rolls each
• 8 Slices aged swiss cheese
