• 1 Small white onion finely chopped
• 4 Large cloves garlic finely chopped
• 1 teaspoon Ground cumin
• 1 teaspoon Dried oregano ideally mexican oregano
• 1 teaspoon Chipotle chile powder
• 1 teaspoon Smoked paprika
• 1 tablespoon Chipotle hot sauce or more to taste
• 1.5 pound 2 skin on, bone in chicken breast halves
• As required Salt and freshly ground black pepper to taste
