• 2 teaspoon Dijon mustard
• 2 teaspoon Fresh thyme sprigs or 1/2 teaspoon dried thyme
• As required S and p to taste
• 5.5 cup Fresh breadcrumbs panko can be used in a pinch
• 3 tablespoon Unsalted Butter Melted
• 0.25 teaspoon Kosher salt
• 6 Boneless Skinless Chicken Breasts
• Kosher Salt And Freshly Ground Black Pepper
• 8 Very thin slices of ham
• 8 ounce Shredded gruyere or swiss cheese
• 0.25 cup Chicken Stock Or Broth
• 0.25 cup Dry or semi dry white wine
• 1 teaspoon Fresh thyme leaves or 1/2 teaspoon dried thyme
• 2 tablespoon Unsalted butter cut into 8 pieces
