STEP 1.1. Add ginger, water and a pinch of salt to a pan.
STEP 2.2. When the soup starts to boil and bubble,add the chicken pieces and spring onion.
STEP 3.3. Turn off the stove.
STEP 4.4.Cover pan with a lid and let it stand for 5 minutes.
STEP 5.5. Do not overcook the chicken. Check a piece of chicken after 5 minutes if not cooked properly then bring to a boil for about 1-2mins
STEP 6.6. Cover with lid and repeat this step.
STEP 7.7. Season the soup to taste with light soy sauce.
STEP 8.8. Garnish with spring onions and serve immediately with a side condiment of dark soy sauce and chilli.
