Rum, coffee, and pineapple is one of our favorite tiki combos, and the castaway is where it all began for us. Its a creation of legend jeff beachbum berry, based on a shot he used to serve at dorrians red hand bar in nyc. You can use dark rum or aged rum here, but if you use dark rum, be sure its not too sweet. Weve tried with a blackstrap rum, and found that its molasses sweetness fights with the coffee liqueur.
