Cajun potatoes is a starter from a very famous restaurant BBQ Nation. Loved by all the age groups but specially kids. They are made using baby/small potatoes, Mayonnaise & Spices. #vk
STEP 1.Take a mixing bowl. Add mayonnaise, all the spices and mix well.
STEP 2.Adjust the consistency with the milk. (Sauce should be not very thick or thin)
STEP 3.Boil the potatoes for 1 whistle. (They shouldn't break)
STEP 4.Cool and place them on a board. Press gently with your palms to flatten them...do not break them.
STEP 5.Make a thin slurry by adding cornflour, maida, salt and water.
STEP 6.Keep oil in a flat pan on the stove for frying.
STEP 7.When the oil is hot enough dip the flattened potatoes in the slurry and fry in medium flame from both the sides till golden and crisp.
STEP 8.Take out on Ab absorbent paper.
STEP 9.Place the potatoes in a platter. Pour the sauce generously. Sprinkle onions and coriander leaves and serve hot.
