• 1 Small yellow onion diced
• 3 Garlic cloves minced
• 2 cup Cauliflower florets
• 4 cup Broccoli florets
• 0.5 cup Grated carrots divided
• As required Fine sea salt and black pepper, to taste
• 4 cup Vegetable broth, divided
• 0.5 cup Raw cashews, soaked in hot water for at least 30 minutes and drained
• 1 tablespoon Juice from 1 lemon about
• 3 tablespoon Nutritional yeast
• 0.5 teaspoon Dijon mustard
• Chopped parsley
• Sunflower seeds, pumpkin seeds
• 30 Shredded vegan or cheddar cheese, leave out for whole/paleo
