• 3 tablespoon Olive oil, divided
• 2 pound Beef Stew Meat
• 4 inch Medium carrots, cut into 1 pieces
• 1 Large onion, chopped
• 4 Garlic cloves, minced
• 1 can Diced tomatoes, drained
• 1 can Tomato paste
• 0.75 teaspoon Salt
• 0.5 teaspoon Pepper
• 2 Cartons chicken broth
• 2 tablespoon Minced fresh parsley, optional
• 2 pound Potatoes , peeled and cubed
• 1 can Cannellini beans, rinsed and drained
• 0.25 cup Grated Parmesan Cheese
• 1.5 cup Uncooked ditalini or other small pasta
• 2 cup Chopped Fresh Spinach
