• 500 gram Passata
• 100 gram Dark brown muscavado sugar
• 100 milliliter Red wine vinegar
• 2 tablespoon Golden syrup
• 1 teaspoon Worchestire sauce
• 1 teaspoon Smoked paprika, heaped
• 0.5 teaspoon Cracked black pepper
• 0.5 teaspoon Ground ginger
• For the quesadillas
• 400 gram Chopped Cooked Chicken
• 2 Large handfuls cheddar cheese
• 1 Small red onion, finely chopped
• 2 tablespoon Coriander leaves, roughly chopped
