Hillel the Elder, a rabbi and scholar who was born in Babylon and lived in Jerusalem during the first century B.C., is known to be one of the earliest sandwich enthusiasts. The Haggadah (a Jewish text read during Passover) tells the story of Hillel making sandwiches with Paschal lamb, unleavened matzah bread and bitter herbs. Jewish people attempt to replicate this by making their own matzah sandwiches during the Passover Seder.
