In September, the Indian fruit basket showcases a unique bridge between summer, monsoon and winter fresh produce. The mangoes have finally taken a back seat, monsoon favourites are beginning to thin out, and the markets have started making room for the arrival of autumnal fruits. Among them is the underrated and slightly old-fashioned sitaphal, or custard apple, whose knobbly green exterior hides an almost dessert-like white pulp.

In India, custard apple is harvested in different varieties, in nearly every region at slightly varying times, but September is an especially good month for catching the fruit at its seasonal best. Custard apple is generally eaten fresh, but it is also used in making desserts, ice creams, and other indulgent beverages. However, for bartenders, sitaphal is interesting for more than its seasonality. Its naturally sweet, creamy pulp has a soft texture and gentle tropical character compared to the sharp acidity of pineapple or citrus. 

As a result, sitaphal can bring body and roundness to your drink while allowing brighter ingredients such as lime, ginger, and aromatic spices to do the cutting. The critical bit here is preparation. This is because custard apple has plenty of hard seeds, so the pulp needs to be separated carefully before it goes anywhere near a cocktail shaker. It also benefits from being used fresh. 

Innovative Custard-Apple Cocktails For An Indulgent September Evening

The recipes below keep the delicious custard apple at centre stage, but take the show in different, rather spectacular directions. Each recipe serves one cocktail.

Sitaphal Saffron Whisky Sour

The creamy sweetness of ripe sitaphal works beautifully with the warmth of whisky in this drink, while saffron adds a subtle floral depth. Fresh lemon keeps the cocktail together while ensuring it is bright and not overtly rich.

Ingredients

  • 60 ml whisky
  • 30 ml fresh sitaphal pulp, thoroughly deseeded and strained
  • 20 ml fresh lemon juice
  • 10 ml saffron-honey syrup
  • 15 ml egg white, optional
  • 2–3 saffron strands, for garnish
  • Ice

For the saffron-honey syrup

  • 2 tbsp honey
  • 2 tbsp warm water
  • 5–6 saffron strands

Method

  1. To make the saffron-honey syrup, soak your saffron in warm water for 5 minutes, then stir in the honey until it is completely dissolved. Remember to cool before using.
  2. Now, add the whisky, sitaphal pulp, lemon juice, saffron-honey syrup, and egg white, if using, to a cocktail shaker.
  3. If using egg white, shake vigorously without ice for about 10 seconds; otherwise, skip.
  4. Then add ice and shake again until thoroughly chilled.
  5. Finally, double-strain into a chilled coupe or rocks glass over fresh ice.
  6. Garnish with two or three saffron strands and serve.

Sitaphal Cardamom Martini

For those who like their cocktails smoother and more perfumed, this combination turns the familiar custardy fruit into a proper after-dinner drink. Plus, cardamom brings out sitaphal's natural, vanilla-like sweetness without introducing any other dominant flavour.

  • 45 ml vodka
  • 30 ml sitaphal pulp
  • 15 ml dry vermouth
  • 10 ml cardamom syrup
  • 5 ml fresh lemon juice
  • Ice
  • One lightly crushed cardamom pod, for garnish

Method

  1. Pour in your vodka, sitaphal pulp, vermouth, cardamom syrup, and lemon juice into a shaker, along with ice. 
  2. Shake well and then double strain into a chilled Martini or coupe glass. 
  3. Garnish with the cardamom pod and serve.

Sitaphal Coconut Daiquiri

This drink is a tropical twist on the classic Daiquiri. It pairs ripe sitaphal with coconut rum for a soft, fragrant cocktail. Try to use ripe, naturally sweet sitaphal and go easy on the sugar syrup. Since coconut rum is already somewhat sweet, the lime is essential for giving this drink a clean, lively finish.

  • 50 ml coconut rum
  • 30 ml fresh sitaphal pulp, deseeded and strained
  • 20 ml fresh lime juice
  • 10 ml sugar syrup
  • 2–3 drops vanilla extract, optional
  • Ice
  • Fresh coconut flakes or a small sitaphal wedge, for garnish

Method

  1. Add your coconut rum, sitaphal pulp, lime juice, sugar syrup, and vanilla extract, if using, to a cocktail shaker.
  2. Then fill the shaker generously with ice and shake vigorously for 12–15 seconds.
  3. Finally, double-strain into a chilled coupe or Daiquiri glass.
  4. Garnish with a small sitaphal wedge or a few toasted coconut flakes and serve.

Sitaphal Negroni Twist

This cocktail is for drinkers who prefer a unique combination of bitter and sweet flavours. Sitaphal softens the classic bitter-spirit profile of the drink without erasing it, creating a more balanced Negroni cocktail variation with an unexpectedly fruity foundation.

  • 30 ml gin
  • 20 ml bitter aperitif
  • 20 ml sweet vermouth
  • 25 ml sitaphal pulp
  • 5 ml fresh orange juice
  • Ice
  • Orange peel, for garnish

Method

  1. Add all your ingredients to a mixing glass with plenty of ice and stir until properly chilled and well-combined. 
  2. Then strain over one large ice cube in a rocks glass. 
  3. Finally, express an orange peel over the drink’s surface and drop it in, before serving.

Sitaphal Espresso Flip

This cocktail is actually the slightly rebellious one. Think custard apple dessert with a grown-up coffee finish. How do the flavours work? Coffee's roasted bitterness gives custard apple a deeper, dessert-like dimension, while dark rum ties the two together. The egg is optional, but it is ideal for giving the drink its characteristic flip-like richness.

  • 10 ml demerara syrup
  • 1 whole egg
  • 2 dashes aromatic bitters

  1. Add your rum, sitaphal pulp, espresso, syrup, egg, and bitters to a shaker. 
  2. Then shake hard without ice if using egg. Otherwise, skip the step.
  3. Now add ice to the cocktail shaker and shake again until thoroughly chilled and well-combined.
  4. Double strain into a chilled coupe and grate a little nutmeg over the top before serving. 

Sitaphal Bellini

Give the ultimate brunch cocktail a September makeover. Here, sitaphal replaces the usual peach with something softer and more aromatic, while sparkling wine keeps the drink bright and celebratory.

Ingredients

  • 30 ml finely strained sitaphal pulp
  • 10 ml fresh lemon juice
  • 5 ml honey syrup
  • 90 ml chilled Prosecco or other dry sparkling wine
  • Ice, for chilling
  • Thin sitaphal slice, for garnish

Method

  1. Stir your sitaphal pulp, lemon juice, and honey syrup together in a chilled mixing glass. 
  2. Then pour it into a chilled flute or coupe and slowly top up with sparkling wine.
  3. Finally, stir once, very gently, and garnish before serving.
