Malvani cuisine, originating in a town called Malvan in the Sindhudurg district of Maharashtra, is heavily influenced by Goan and Maharashtrian cuisine. Thus, like in Goan cuisine, coconut is added to almost every dish in one way or another, be it grated, dry-grated, fried, as a paste or the milk. It is also significantly spicy — the traditional Malvani spice mix combines 15 to 16 dry spices together. 

Fish dominates the cuisine, thus Bombay duck fry, Bangda fry, Paplet saar and prawn curry feature in almost every restaurant menu card. 

The popular perception is that Malvani cuisine consists of only non-vegetarian dishes. However, it is ruefully incorrect, because Kalya vatanyancha samara or black pea curry is one of the most popular food items from the cuisine.
