Once believed to be a simple street food from China's Sichuan region, malatang has evolved as one of the fastest-growing comforting foods across Asia and also beyond. In recent years, queues outside the malatang restaurants have become very common in cities like Seoul, Singapore, Bangkok, and Sydney, where younger diners are especially welcoming of its customisable structure and bold flavours.

Unlike the classic bowl of soup, where the ingredients are chosen by the chef, malatang lets diners build their own bowl. Vegetables, mushrooms, tofu, noodles, seafood, meat, and dumplings are selected, weighed, and then cooked to make a rich, spicy bowl of soup. While the signature Sichuan peppercorns add a gentle numbing feeling, diners can also choose how spicy they want the soup to be, as per their preference, making it convenient for different taste buds. The Story Behind Malatang

The name malatang translates to "numbing spicy soup," where ma refers to the tingling sensation that you get from Sichuan peppercorns, and la means spicy heat from chillies. Its roots are from the Yangtze River in Sichuan, where boat workers would often cook inexpensive vegetables and meats in collective pots of chilli broth after the long, hectic working day.

Over time, vendors started serving the soup as an affordable street snack. As the food culture of  China evolved, so did the malatang soup. Restaurants presented some fresher ingredients, better-quality broths, and the make-your-own-bowl format. During the past decade, the dish has become particularly popular in South Korea. Ingredients:

For the Broth:

2 tbsp chilli oil

1 tbsp Sichuan peppercorns

4 garlic cloves, minced

1-inch ginger, sliced

2 tbsp doubanjiang (spicy bean paste)

1 litre chicken or vegetable stock

1 tbsp soy sauce

1 tsp sugar

Salt to taste

For the Soup:

200 g noodles (glass noodles, ramen, or wheat noodles)

1 cup bok choy

½ cup mushrooms

½ cup tofu cubes

½ cup lotus root slices (optional)

Fish balls or dumplings (optional)

Thinly sliced meat or seafood (optional)

Garnish

Spring onions

Sesame seeds

Fresh coriander

Extra chilli oil

How To Make Malatang Soup:

Step 1 

In a deep pan, heat chilli oil and add Sichuan peppercorns, garlic, ginger, and doubanjiang. Cook it gently for about two to three minutes until the oil turns aromatic and intensely red.

Step 2

Pour in the stock, soy sauce, sugar, and a little salt into this pot. Simmer it for about 10 to 15 minutes so that the spices infuse the broth completely before you add the remaining ingredients to it.

Step 3

In a separate pan, cook the noodles according to the packet instructions. Drain and keep aside so they stay springy and do not make the broth too cloudy. 

Step 4

Add some vegetables of your choice, tofu, dumplings, seafood, or sliced meat to the simmering broth. Cook everything until it turns tender but not mushy.

Step 5

Place the cooked noodles in the serving bowls. Spoon the hot broth and cooked ingredients over it, and lastly finish with coriander, spring onions, sesame seeds, and extra chilli oil if required.
