It's not your typical kulcha, which can be found virtually anywhere in Northern India, but it's a unique invention found only in Jammu and Kashmir. This Kashmiri Kulcha is a baked delicacy that is cooked in a traditional kiln and is created from a mixture of wheat flour and refined flour. It has a delicate texture that is best eaten slathered with butter and served with kaahwa or sheer chai as a side dish.

Puttu, Kerala 

This nutritious Indian breakfast puttu is composed with rice and coconut, two of Kerala's most prevalent ingredients. This is a soft, steamed rice cake that is frequently served with a kadala curry (black chickpeas).

This tasty and filling breakfast from Maharashtra is prepared with flattened or beaten rice, spices, peanuts, potatoes and onions. Kanda poha is one of the staple breakfast recipe from Maharashtra made with onions (kanda). This is gluten-free and vegan. It is an easy, quick and healthy option for breakfast or brunch or as a snack. 

Mirchi Vada, Rajasthan

Sattu Paranthas, Bihar 

Sattu paranthas are Bihar's traditional breakfast of choice. Sattu, roasted channa dal flour, and grains are used to make it. The parantha is stuffed with sattu flour, chopped onion, green chillies, ginger, garlic, and ajwain and baked on a tawa before being served with curd.
