In layman’s language, sushi is a traditional Japanese dish that sees the use of vinegared rice accompanied by a variety of ingredients, be it vegetables, seafood, or more. Restaurant Sugita, Tokyo, Japan

Takaaki Sugita, chef and owner, spent twelve years training at Nihonbashi Kikokucho Miyako, a sushi store founded in 1908 that went independent in 2004. Mr Sugita was born in Chiba Prefecture and is unique among Tokyo's finest sushi chefs in not having trained under a particularly notable sushi master. You'll start with an exquisite appetiser sequence that includes soft steamed abalone, delicate flounder sashimi, and smooth soy-marinated bonito. A famous sardine roll with ginger and herbs will provide superb balance, followed by a warm chawanmushi with anago. Rich monkfish liver with miso-marinated salmon roe will give depth, and properly cooked cutlassfish with a hint of lime will complete the meal. You will next be treated to an immaculate sushi sequence, with the chef's trademark rice, seasoned with a combination of amber and red vinegars, serving as the ideal base for each topping. Expect outstanding nibbles like kohada, delicate baby squid, and isaki, followed by sumptuous chutoro and otoro tuna. Horse mackerel and black perch will highlight the chef's accuracy, while prawns, akami tuna, and sweet soy-glazed anago round out the menu. A silky, expertly cooked tamago will bring this outstanding sushi meal to a pleasant conclusion.

An Omakase dinner is an exclusive chef-curated dining experience and at Masa, New York, this dining experience could cost you a fortune. This luxe restaurant asks diners to allow two hours for the Omakase dinner experience. The dress code one needs to follow is comfortable and casual wear. The restaurant even requests the diners to limit the amount of perfume they wear so as not to overwhelm the sense of smell of other diners.  At Bar Masa, you should concentrate on the restaurant's superb sushi and trademark dishes. Begin with toro tartare topped with caviar, then on to exquisite sashimi and nigiri including fatty tuna, uni, shima-aji, and kinmedai. The iconic Toro Toro Roll is a must-try, demonstrating the restaurant's fine artistic approaches to sushi. To wrap up the experience, try kampachi with serrano potato julienne or the famous Peking duck foie gras tacos.

Sushi Misaki, Bangkok, Thailand

The restaurant will call and ask if you want the B4,000 or B6,000 omakase, which are the only two options on the menu. The courses in the two sets are very similar, with the cheaper set having 18 dishes and the more costly having 20. The price difference is mainly about size, with premium delicacies like otoro (fatty tuna), sea urchin, and salmon roe being more generously portioned in the costlier package. Whatever you choose, you'll feel more than taken care of as Misaki (who for most of the dinner mans the counter single-handedly) guides you from the first course of sea urchin and snow crab locked in a rich beef consomme jelly, through tuna rolls and dainty cups of buttery monkfish liver, onto some eight or so different nigiri (fish atop rice), with the occasional abalone soup or rich oyster in between, before finishing with one of the best red miso soups you've ever had. The chef prepares much of his sushi in the Edo method, which means that the fish has gone through an ageing process that adds fresh intensity to his bluefin tuna, which has been cured for one week before serving.

When Madonna hails a restaurant for their taste, it needs no further approval. Maido, Lima, Peru

Blending the finest of two very different cuisines would be a difficult task for anybody, but Lima-born chef Mitsuharu Tsumura fulfils that promise with passion. His food effectively blends rare Amazon rainforest ingredients with Peruvian mainstays such as quinoa and maize, combining the unusual with the delicate tastes and methods of Japanese cooking. Peru has deep links to Japan, as seen by the sizable Japanese community found across the nation. A little appetiser made of rich tofu and topped with quinoa begins your taste journey and is said to be really creamy, and the crunch of the grains adds a unique texture. A classic wakame sarada will meet expectations, while the 'Cevichero' maki rolls with ebufarai, avocado, and chalaca wil  arrive with a side of delectable fried squid. Maido’s famous dishes include the 'Amazing Scallops' from Paracas (a beach town south of Lima) and the 'Nikkei Ceviche'. The traditional marinade used to cure ceviche is known as 'tiger's milk,' a hot citrus-based sauce with chiles and onions.
