Lemon-Pepper Seasoning
Toasting black peppercorns slightly before grinding them with lemon zest, garlic granules, white pepper and dried parsley gives the chicken a heady, citrus-laden aroma that fills up the kitchen as it cooks. Make a little extra to save some of the seasoning for later and use it on chicken wings or roast chicken thighs in smaller portioned meals. Maple-Mustard Dry Rub

For a blend that is different and sweeter in comparison to its counterparts, use a high quality dry mustard powder in combination with brown sugar, paprika, black pepper and garlic powder. The balance between pungency and sweetness—the dry rub also enables for beautiful caramelisation, allowing the skin to crisp up beautifully while giving it a golden-brown hue. Make a sauce with the collected juices in the roasting pan and spoon it over the carved pieces of chicken while serving.
