Oatmeal cream pies are certainly rising in popularity for being a go-to comfort snack. People have made the cream pies in rotation so it is only fair that we talk about the recipe. It looks like a lot of us are playing with sweet and savoury flavours. 


Oatmeal cream pies are soft and chewy oatmeal cookies, much thicker than oreo, with a layer of vanilla buttercream in the middle. To make a healthier version, you can add coconut sugar to the cookies, along with walnuts and pistachios. In no time, they'll be a snack time favourite. A lot of the time, these oatmeal cream pies were the comfort food during the pandemic. So it is time to jump on the bandwagon and try them out.

Let’s elevate the everyday oatmeal through the exceptional route of baking. The dessert is perfect for indulgence. You may also love the sweet flavour of cream which only accentuates the flavour from the cookies. 


Here’s the recipe: 


INGREDIENTS:


4 cups oatmeal 

2 large eggs

11/2 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup white sugar 

1/2 cup brown sugar 

1 cup refined flour

1 teaspoon baking soda

2 teaspoons vanilla extract

2 cups unsalted butter

1 cup confectioner’s sugar 

1 teaspoon milk 


METHOD

  • Preheat the oven to 350 degrees Fahrenheit. 
  • Line the baking tray with parchment paper. 
  • Cream 1 cup butter, white and brown sugar. 
  • Add eggs and vanilla extract, while you mix. 
  • In a separate bowl, combine flour, baking soda, cinnamon and salt. 
  • Add oats to the mix. 
  • Combine wet and dry ingredients. 
  • Make cookie dough with your hands. Drop dough on parchment. 
  • Bake until 15 minutes. 
  • For the cream filling, beat butter till it becomes fluffy. 
  • Add the confectioner’s sugar. 
  • Add milk and vanilla extract. 
  • Beat mixture for 3-4 minutes. 
  • To assemble, pipe the cream filling on the oatmeal cookie, and put the second cookie on top.
