Your great-grandfather was connected with the Royal Kitchen of Awadh. Was this the only thing that sparked your interest in cooking or is there more to it?
While my great-grandfather's involvement in the Royal Kitchen of Awadh certainly ignited my passion for cooking, there is more to the story. During my years of schooling and graduation, I frequently encountered the captivating allure of Awadhi cuisine, the intricate art of Dum Cooking, and the elegant Nawabi Lifestyle. These captivating elements collectively shaped my aspirations and led me to choose a career path in the culinary arts.
Would you like to describe what Rampuri Cuisine actually is?
Rampuri Cuisine is a culinary treasure that, while not yet as widely recognized as it deserves to be, has been gaining attention from establishments such as Marriott, who are keen on promoting its unique flavors. This cuisine is a harmonious fusion of Mughlai and Awadhi culinary traditions. It encapsulates the rich heritage and influences of the Rampur region, showcasing a symphony of exquisite flavors, fragrant spices, and elaborate cooking techniques that have been passed down through generations.
What was the first innovative recipe that you created and what inspired you?
The first inventive recipe I crafted was the "Raan Ke Kebab." My inspiration for this creation stemmed from the renowned Awadhi culinary tradition, celebrated for its delectable kebabs that effortlessly melt in one's mouth. While these kebabs delighted the majority of our guests, I was intrigued by the distinctive preferences of a select few, particularly those from the Punjabi community, who preferred to savor the texture of meat grains in their mouth. This intrigue and the desire to offer something distinct and extraordinary motivated me to innovate and bring forth the concept of "Raan Ke Kebab," catering to a diverse range of palate preferences.
