Remember the chiming bells of the kulfi vale bhaiya who used to come every afternoon in the torrid heat? One kulfi was all it took to forget the intolerable heat. For many of us, kulfi continues to be that summer staple that helps quench our thirst and give us the much-needed respite from the blazing heat. There's something about 'desi' kulfi that no other modern decadent dessert can quite take its place. And now it is summer, we are in no mood to hold back.

Making kulfi at home is as easy as making smoothies and shakes. Just follow these steps and you will have your own delicious malai kulfi.

Ingredients

3 cups of whole milk

1 ½ tbsp corn flour

2 tbsp crumbled khoya

3 tbsp finely crushed almonds

3 tbsp finely crushed walnuts

3 tbsp sugar

1 tbsp cardamom powder

Preparation

1. In a heavy bottom pot bring the milk to a boil.

2. Add sugar and mix it well until it is dissolved completely.

3. Take 3 tbsp of milk from the same pot and mix the corn flour in it. After that keep it aside.

4. Let the milk boil on a medium heat for 10-12 mins more. Make sure to stir it sometimes.

5. Then add the cornstarch mixture in the pot and stir it continuously, so that no lumps are formed. If there are lumps, break it with a spoon or spatula.

6. Keep on stirring for some time till the milk thickens.

7. Add khoya, cardamon powder, almonds and walnuts in the milk pot and let it boil in low flame heat for at least 3-4 mins. Stir the mixture well so that everything is mixed properly.

8. Turn the flame off and let the mixture cool.

9. After that pour the kulfi mixture in the serving glass. Then cover the glass with foil and gently insert the popsicle stick in the middle.

10. Keep the kulfi in the freezer till it sets. And that’s it your melt-in-mouth malai kulfi is ready.

Tip: you can also set the kulfi with sprinkles of pistachio for extra crunch.
