Breakfast is the most important meal of the day that gets the least of our attention. Don’t skip breakfast, instead savour and enjoy it! With some easy and quick one-bowl vegan recipes, there’s no way you’ll start the morning without a big smile on your face. If you aren’t vegan, this may be your opportunity to dip your toe in the water as the below-mentioned three breakfast recipes require no complex ingredients. 


Microwave Cinnamon Banana Oats


This is a bowl of warm comforting oatmeal made with simple wholesome ingredients in a microwave. The banana makes it a perfect breakfast for all seasons.


Ingredients:


1/2 cup of oats

3/4 cup of non-dairy milk of choice (almond milk pairs perfectly with this)

1/4 cup of water

A pinch of cinnamon 

A pic of salt

1/2 tsp of vanilla essence 

1/2 banana cut in coins



Mix the oats, water, milk, salt, cinnamon and vanilla in a microwave-safe bowl.

Once well combined, microwave for a minute and a half, and check on the oats at the halfway mark.

Remove from microwave and top with banana coins and enjoy!


Mocha Smoothie

This super creamy smoothie looks and tastes like chocolate milkshake and is a wonderful way to start your day. Drink out of glass or enjoy it in a bowl with some granola, it’s all up to you. 


Ingredients:


1 frozen banana

1/2 cup of almond milk 

1/2 tbs of cocoa powder

2 soft pitted dates 

1/2 tsp of vanilla essence 


Instructions


Add all the ingredients to a high-power blender and blend until smooth and pour into a glass. 


Chickpea Coriander Sandwiches


This is a great breakfast for those who enjoy something savoury in the morning. The chickpea and veggies make it nutritious and lemon gives a tangy kick.

Ingredients:


1 cup of cooked chickpeas

1/2 grated carrot 

1/4 bell pepper 

1 tbs of chopped coriander 

Juice of one lemon 

Salt and pepper



Mash the chickpeas in a bowl until you get the desired consistency. Add the carrots, peppers, coriander. 

Mix this and season with salt, pepper and lemon juice. 

Slather the mixture on two toasted pieces of bread and enjoy!
