Mix vegetables is a curry made from a variety of vegetables available in the market. It is an all-season dish loved by most. The dish is characterised by multiple flavours due to the addition of many vegetables. Besides, it is absolutely delicious and nutritious.

Mix veg is served in most restaurants. The restaurant version is mostly thick and creamy. However, it can be made light and tasty at home. While considering the vegetables for mixed veg, one needs to be flexible. One can choose seasonal vegetables as well as common vegetables like capsicum, cabbage, cauliflower, french beans, peas, carrots, potatoes, tomatoes, onions, and others.

  • 1 Tbsp Oil 
  • 1 Tbsp Butter 
  • 1 Tsp Cumin 
  • 2 Inch Cinnamon Stick 
  • 2 Black Cardamoms 
  • 1 Bay Leaf 
  • 5-6 Black Peppercorns 
  • 4 Cloves 
  • 4 Green Cardamom 
  • 1 Inch Chopped Ginger
  • 2 Chopped Green Chillies 
  • 4-5 Cloves Chopped Garlic 
  • ¾ Cup Chopped Onion 
  • 1 Cup Diced Tomatoes 
  • 1 cup Diced Carrots
  • 1 cup Chopped Cauliflower
  • 1 cup Chopped Beans
  • 1 cup Diced Capsicum
  • I cup Diced Potatoes
  • 1 cup Peas
  • 10-12 Soaked Cashew Nuts 
  • 1 Tsp Red Chilli Powder 
  • ½ Tsp Turmeric Powder 
  • 1 Tsp Coriander Powder 
  • ½ Tsp Cumin Powder
  • ¾ Cup Water 
  • 2 Tbsp Oil 
  • 4 Tbsp Chopped Onion 
  • 1 Tsp Ginger Garlic Paste 
  • 1 Cup Water 
  • 1 Tsp Kasuri Methi 
  • Salt To Taste 
  • ⅓ Cup Fresh Cream 
  • 1 Tbsp Chopped Coriander Leaves
  • Chopped Coriander Leaves


  • In a pan, heat oil and butter. Add the whole spices. Saute well.
  • Then add chopped garlic, ginger, green chillies, onions, tomatoes, cashew nuts, red chilli powder, turmeric powder, coriander powder, and cumin powder. Add little bit of water and cook well.
  • Grind them in a mixer grinder.
  • Again in a pan, add oil and deep fried carrots, potatoes, cauliflower, beans, capsicum and peas.
  • In the meanwhile, in another pan add oil. Then add chopped onions, ginger-garlic paste, and water. Cook well.
  • Add the fried veggies. Mix well. Add water and cook well.
  • Add kasuri methi, salt, fresh cream, and coriander leaves. Mix well. Serve hot.
