
Traditionally a Tamil dish, the sundal is essentially a dish where different lentils, legumes, and grains are stir fried together. It’s a vegan, healthy dish. It's also a favoured South Indian dish during festivals and when fasting. Along with channa, the dish requires oil, black mustard seeds, urad dal (black gram), asafoetida, dry red chillies, curry leaves, grated coconut, and salt. Besides channa, the sundal can also be made with other ingredients, like rajma, sweet corn, and more.
