- Shrimp Scampi with Zucchini Noodles

Scampi are small crustaceans, much like lobsters, with pale pink shells, also called langoustines. Italians settled in the US swapped shrimp for scampi, but both the names stuck. And so the dish was born, along with several variations depending on the method of cooking. It uses garlic, white wine or broth, olive oil, salt, red pepper flakes, black pepper, shrimp, parsley, lime juice, and butter. It pairs well with pasta, bread, or even vegetables, like zucchini noodles.
Zucchini noodles, also called zoodles, are a popular replacement to carb-heavy pastas. The British call zucchini 'courgette', and have been eating Courgetti, or courgette noodles, for a long time. They’re tossed in salt before cooking so the vegetable dries and doesn't get soggy. It’s as versatile as pasta, and can be had with a host of sauces and toppings.
The Shrimp Scampi with Zucchini Noodles is essentially two highly versatile dishes coming together, and is certainly a healthy meal option. The many health benefits of zucchini include being rich in Vitamin B6, which helps regulate blood glucose, and may protect against diabetes. It's also rich in antioxidants like lutein and zeaxanthin, which improve eye health. Besides being full of nutrients, they’re also low in calories, and sugar, and a great substitute to carbs.
