
Crispy and indulgent, Spicy Salmon Cakes are made using salmon, eggs, onion, coriander, chilli-garlic sauce, soy sauce, five-spice powder, breadcrumbs, and oil. Often treated as a side dish or appetiser, they're small cylindrical patties or croquettes, breaded and deep fried, with a soft filling on the inside.
Similar fish and crab cakes were eaten on the US’ east coast, while salmon cakes in particular gained prominence in the American South. They seemingly originated in France, as croquettes, to use up kitchen leftovers. Monsieur Escoffier is often credited with inventing Salmon Croquettes, with the help of Philias Gilbert.
