Ingredients for Zarda Pulao Recipe

  • 1/2 cup Rice
  • As required Basmati
  • 1/4 cup Sugar
  • As required ½ cup ghee
  • 0-1/4 nos sticks of cinnamon
  • As required half inches each
  • 0-1/4 nos green cardamom
  • 0-1/4 nos Clove
  • 0.63 cup Orange juice
  • 1/2 cup Water
  • As required pinch of orange food color (optional)
  • As required Pinch of saffron
  • As required Pistachio for garnish

Directions: Zarda Pulao Recipe

  • STEP 1.Add saffron in 1 tablespoon of water. Set aside.
  • STEP 2.Add 2 cups of orange juice with 2 cups of water. Add orange food color and boil.
  • STEP 3.Add rice and cook until rice is done.
  • STEP 4.Drain the rice and spread in a platter so that rice does not stick.
  • STEP 5.In a pan, add sugar and remaining ½ cup of orange juice.
  • STEP 6.Add cinnamon, cardamom and cloves.
  • STEP 7.Add ghee/butter and stir until sugar dissolves.
  • STEP 8.Add rice, saffron water and mix well in low heat.
  • STEP 9.Once liquid is dried, turn off stove.
  • STEP 10.Spread zarda in a platter so that rice does not get sticky.
