Sakes gentle flavors are a natural match for apple and pear, and nowhere is that better-expressed than in the yuki ringo, an autumnal sour served at the azumi restaurant in the four seasons hotel in baltimore. The star of the show is creamy, cloudy nigori sake, a type of sake left mostly-unfiltered, with snow-white unfermented rice particles offering a smoother taste and a rich, velvety body. For the pear liqueur, azumi uses st. George spiced pear liqueur but any pear liqueur you like will be delicious, so long as its on the sweet side.
