Chinese Lamb Noodle Soup is humble comfort food, perfect for a chilly day. In the Chinese culture, certain foods such as lamb, cinnamon, anise, fennel seeds, garlic, ginger, scallion, and chili, are believed to be “warming.” Warming foods, also referred to as “yang” foods, are thought to add heat to the body, helping to improve circulation and stave off colds. The opposite of warming foods or yang foods are “cooling” foods or “yin” foods. When your body is too yin, you need to balance it out with yang foods.

Ingredients for Yin And Yang Lamb Soup Recipe

  • 500 gram Lamb leg
  • 6 No.s Green chili pepper slices
  • 1 teaspoon Ground white pepper
  • 4 No.s Spring onions
  • 1 piece Ginger
  • 1 No.s Garlic Clove
  • As required Fresh coriander A handful
  • 1 flakes Chilli tbsp
  • 1 teaspoon Soy sauce
  • As required Salt

Directions: Yin And Yang Lamb Soup Recipe

step 1

  • STEP 1.1 place 500 gm of lamb leg in a saucepan, add boiling water and bring back to a boil. Turn the piece of lamb over.

step 2

  • STEP 2.2 reduce the heat to medium, cover the pan and boil for 1 ½ to 2 hours till the lamb is tender.

step 3

  • STEP 3.3 remove the lamb from the pan and keep aside to cool. Retain the stock for soup.

step 4

  • STEP 4.4 once cooled, cut the lamb into bite size chunks.

  • STEP 5.5 for the yin part, in a wok heat 1 tbsp oil, add 1 tbsp chilli flakes and fry for a few seconds.

  • STEP 6.6 add 1 clove finely chopped garlic and ½ cm finely chopped ginger and fyr for a few seconds.

step 7

  • STEP 7.7 add half the chopped lamb and stir fry for a few seconds, add 1 tsp soy sauce and fry for 1 minute.

step 8

  • STEP 8.8 add half the lamb stock from the saucepan and bring to a boil.

step 9

  • STEP 9.9 to this add 2 finely chopped spring onions and half the quantity of chopped coriander, add salt and stir. Serve in a bowl. Keep warm.

  • STEP 10.10 for the yang part, add the remaining half of the stock in a wok and add 1 tsp white ground pepper, ½ cm finely chopped ginger and stir well.

step 11

  • STEP 11.11 add the remaining chopped lamb to the wok and bring to a boil .

step 12

  • STEP 12.12 to this add 6 thinly sliced green chillies, 2 finely chopped spring onions, and the remaining chopped coriander. Salt to taste and stir.

step 13

  • STEP 13.13 transfer to another serving bowl and serve both the bowls of soup together.
