Yellow Bean Chicken Stir Fry Recipe

Chicken stir fried with bell pepper and cucumbers flavoured with a yellow bean sauce. Yellow is the colour of sun, summer and sensational flavours. That’s why we threw together this chicken and cashew nut dish making sure it had plenty of yellow bean sauce. The sweet taste of ginger goes perfectly with our seasonal hero; broccoli. Not only is eating local seasonal produce great for the environment, but getting a vegetable in the right season makes a huge difference to that flavour! Ingredients for Yellow Bean Chicken Stir Fry Recipe

  • 1 gram Chicken breast cut into cm cubes 250
  • 1 gram Cucumber deseeded and cut into cm cubes 150
  • 1 gram Red bell pepper deseeded and cut into cm cubes 50
  • 3 Garlic finely chopped cloves
  • 10 gram Ginger finely chopped
  • 1 No.s Egg white
  • 1 teaspoon Oil
  • 5 milliliter Dark soy sauce
  • 10 gram Yellow bean sauce
  • 5 milliliter Cooking wine
  • 1 teaspoon cornflour
  • 10 milliliter Water
  • 3 gram Cornflour
  • 2 gram Sugar
  • 2 gram Chicken powder
  • As required Salt
  • As required Oil for deep frying

Directions: Yellow Bean Chicken Stir Fry Recipe

step 1

  • STEP 1.in a mixing bowl add 250 gm chicken breast cut into 1 cm cubes.

step 2

  • STEP 1.add ¼ tsp salt, 5 ml cooking wine,1 egg white, 1 tsp cooking oil, 3 gm cornflour, 1 gm chicken powder. Mix all the ingredients together well.

  • STEP 1.leave the chicken to marinate for 5 minutes.

step 4

  • STEP 1.in a wok heat oil for deep frying. When the oil is hot add the marinated chicken and fry for 2 minutes. Stirring frequently to prevent the chicken pieces from sticking to each other.

  • STEP 1.add 150 gm deseeded cucumber cut into 1 cm cubes and 50 gm deseeded red bell pepper cut into 1 cm cubes.stir fry for another 20 seconds and then remove from the wok and drain off the excess oil. Keep aside.

  • STEP 1.pour out most of the oil and retain 1 tbsp in the wok. Add 3 cloves finely chopped garlic and 10 gm finely chopped ginger.

  • STEP 1.fry for a few seconds on high heat till aromatic.

  • STEP 1.-8)add 10 gm yellow bean sauce and 20 ml water and stir together.

  • STEP 1.add 2 gm sugar and 1 gm chicken powder. Mix well and bring the sauce to a boil.

step 10

  • STEP 1.at this stage add the fried chicken, cucumber and red bell pepper and mix together.

step 11

  • STEP 1.next add 5 ml dark soy sauce and 1 tsp cornflour mixed with 10 ml water.

step 12

  • STEP 1.stir together well for 1 minute to ensure that all the pieces are well coated with the sauce.

step 13

  • STEP 1.transfer to a dish and serve.
