#Mumbai Our Yam Vada Pav swaps the traditional potato for creamy, golden boiled yam, spiced to perfection with ginger, green chilies, curry leaves, and a zesty hint of chaat masala. Each tikki is lightly shallow-fried, then hugged in a crisp besan batter coat, deep-fried till crunchy and irresistible. Nestled inside a soft, toasted pav bun smeared with tangy green chutney or fiery dry garlic masala, this vada pav is earthy, spicy, and soul-satisfying—with just the right kick from a blistered fried chili on the side (for the brave-hearted only!). It’s comfort food with character—traditional, yet refreshingly new. One bite, and you’re hooked!

Ingredients for Yam Vada Pav Recipe

  • As required 🔹 For the Yam Vada (Yam Filling):
  • 125 nos • gm boiled yam (peeled & mashed)
  • 1/2 tablespoon • oil
  • 1/2 teaspoon • mustard seeds
  • 1/4 teaspoon • turmeric powder
  • 1/2 tablespoon • ginger-garlic paste (or minced)
  • 0-1/2 nos • green chilies
  • As required finely chopped
  • 0-1 nos • curry leaves (optional
  • As required but authentic)
  • As required • aashirvaad salt to taste
  • 1 tablespoons • chopped coriander leaves
  • 1/4 nos • Juice of lemon (optional)
  • 1/4 tablespoon • chat masala
  • As required 🔹 For the Batter (Besan Coating):
  • 1/2 cup • Aashirvaad besan (gram flour)
  • As required • A pinch of baking soda
  • 0.13 teaspoon • Turmeric
  • 1/4 teaspoon • red chili powder
  • As required • Aashivaad Salt to taste
  • As required • Water as needed (to make a thick batter)
  • As required • oil for deep frying
  • As required 🔹 For Serving:
  • 3 nos • pav buns
  • As required • Dry garlic chutney (optional but traditional)
  • As required • Green chutney or tamarind chutney (optional)
  • As required • Fried whole green chilies (for the brave!)

Directions: Yam Vada Pav Recipe

  • STEP 1.Prepare the Yam Filling:
  • STEP 2.1. Heat oil in a pan, add mustard seeds.
  • STEP 3.2. Once they splutter, add curry leaves, green chilies, and ginger-garlic paste. Sauté for 1–2 mins.
  • STEP 4.3. Add turmeric , chat masala and salt.
  • STEP 5.4. Add mashed yam and mix well.
  • STEP 6.5. Cook for 2-3 minutes, stirring well.
  • STEP 7.6. Add chopped coriander and lemon juice. Mix and cool.
  • STEP 8.7. Divide the mixture into equal (kind of tiki shape).
  • STEP 9.8. Shallow fry the yam tikki for 2 minutes on low flame.
  • STEP 10.2. Make the Batter:
  • STEP 11.1. In a bowl, mix besan, turmeric, chili powder, salt, and a pinch of baking soda.
  • STEP 12.2. Add water slowly to make a thick, smooth batter (like pakora batter).
  • STEP 13.3. Fry the Vadas:
  • STEP 14.1. Heat oil in a deep pan on medium flame.
  • STEP 15.2. Dip each fried yam tikki into the batter and coat it well.
  • STEP 16.3. Drop carefully into the hot oil. Fry until golden and crisp.
  • STEP 17.4. Remove on paper towels.
  • STEP 18.4. Prepare Pav:
  • STEP 19.1. Slice pav buns horizontally (don’t cut fully).
  • STEP 20.2. Toast them lightly with butter or oil on a tawa (optional).
  • STEP 21.3. Spread green chutney or garlic chutney inside (if using).
  • STEP 22.5. Assemble the Vada Pav:
  • STEP 23.• Place one hot vada inside the bun.
  • STEP 24.• Served with fried green chili or more chutney.
