Easy to make bamboo steamed bao. Shanghai Soup Dumplings, or xiaolongbao —perhaps the most perfect single bite of food ever conceived by man—do not require much introduction. Paper-thin wrappers envelop perfectly seasoned pork filling and rivers of hot, flavorful soup. If you want to make more of these, you can multiply this recipe as needed!

Ingredients for Xiaolongbao Recipe

  • 1/2 cup Pork skin
  • 1 cup Pork neck bones
  • 1/2 cup Water
  • 3 piece Ginger
  • 1 cup Scallion
  • 1 tablespoon Shaoxing Wine
  • 1 cup All purpose flour
  • 1 cup Warm water
  • As required For fillling
  • 450 gram ground pork
  • 2 tablespoon shaoxing wine
  • 1 tablespoon Salt
  • 1 teaspoon Sesame oil
  • 1 tablespoon Sugar
  • 1/2 teaspoon Light soy sauce
  • 1/2 teaspoon White Pepper
  • 1 cup aspic diced

Directions: Xiaolongbao Recipe

step 1

  • STEP 1.1. In a small pot add the pork skin and pork bones and cover with cold water, bring to a boil and drain.

  • STEP 2.2. Add 4 cups of water again along with ginger, scallion and wine. Bring to boil and then lower the heat. Cover and simmer for 2 hours.

  • STEP 3.3. After 2 hours turn off the heat. Allow the soup to cool and strain the liquid into bowl.

  • STEP 4.4. As the leftovers in the pot, you can reject them and drizzle some light soy sauce over it.

  • STEP 5.5. Once the liquid is completely cooled cover and refrigerate overnight.

  • STEP 6.The dough

  • STEP 7.1. In a mixing bowl add flour and warm water and knead for 15 minutes. Cover and set aside for 30 minutes.

  • STEP 8.Filling

  • STEP 9.1.take the pork and put it in food processor. Whip everything together and combine well. Gently fold diced aspic.

  • STEP 10.2. Cover and transfer to the refrigerator until ready.

  • STEP 11.1. Make dough balls and roll them into 3 inches size. Fill with 1 tbsp of filling and make dumplings.

  • STEP 12.2. Prepare a bamboo steamer.

  • STEP 13.3. Grease the steamer and then place the filled baos. Keep for 12-18 minutes.  serve hot with soup.
