Ingredients for Xiao's Special Fried Rice Recipe

  • 400 gram Cooked Rice
  • 1 teaspoon Fish sauce
  • 1/2 No.s Onion
  • 1/2 No.s Lime
  • bunch Coriander A
  • 5 No.s Red chillies
  • 3 No.s Garlic Cloves
  • 3 No.s Mushroom
  • 1/2 No.s Ginger
  • 1 No.s Carrot
  • 2 No.s Ham slice
  • 100 gram Raw prawns
  • As required Peas A handful
  • 1 teaspoon Turmeric powder
  • 1 tablespoon Curry powder
  • 1 teaspoon Coriander powder

Directions: Xiao's Special Fried Rice Recipe

step 1

  • STEP 1.1 in a wok heat 2 tbsp oil, add ½ cm finely chopped ginger, 2 cloves finely chopped garlic, 5 finely chopped red chillies, ½ finely chopped onion and fry for a few seconds.

step 2

  • STEP 2.2 add 1 carrot cut into small cubes, 1 handful of peas or as desired and stir fry for 2 minutes.

step 3

  • STEP 3.3 add 2 thick slices of ham cut into small cubes, 100 gm prawns cut into small cubes, 3 mushrooms cut into small cubes and fry for 3 minutes.

step 4

  • STEP 4.4 add1 tsp turmeric powder, 1 tbsp curry powder, 1 tsp coriander powder and stir well together.

step 5

  • STEP 5.5 add 1 tsp fish sauce and stir fry for a few seconds.

step 6

  • STEP 6.6 add 400 gm cooked rice and stir.

step 7

  • STEP 7.7 add salt to taste and stir well.

step 8

  • STEP 8.8 squeeze juice of ½ a lime and stir. Cook till the rice heats through and becomes fluffy. Turn off the heat.

step 9

  • STEP 9.8 garnish with chopped coriander leaves and serve hot.
