Soak the black fungus and shiitake mushrooms in hot water for 20 mins or until soft
Cut ginger into thinstrips
Pit the dates
Boil eggs,cool and peel off their outer part
in a cooking pot add oil and heat it at low flame and stir fry ginger until golden brown
take out the ginger and using the same pot add vegetable stock,soy sauce,red wine and sliced fungus,shiitake mushrooms,red dates,goji berries and cordyceps flowers
boil it for around 40 mins at low medium heat and then add salt and pepper.
now add mee sua and cook it until it gets softened
serve some noodles in a bowl with red wine
and garnish with boiled eggs,coriander leaves and fried ginger slices
