Wife Cakes (also known as Sweetheart Cakes) are a traditional Chinese bakery treat. They're made up of a flaky pastry shell filled with sweet, chewy winter melon and coconut filling. They make a great afternoon snack when served with tea. They're a flaky cookie or pastry with sweet, chewy winter melon and coconut filling. The storey of how this cake came to be has a few distinct interpretations. But here's the storey: there was a couple in China who were madly in love, but they lived in a poor village. The girl's husband's father (father-in-law) became ill unexpectedly, so they spent all of their money on drugs to help him, but he remained unwell. So the girl sold herself as a slave to raise money to help her father-in-law buy medicine. When her husband found out what she had done, he made a sweetened winter melon and almond cake and sold it on the street. He eventually made enough money to be able to reclaim his wife.

  • 110 gram Water
  • 80 gram fine sugar
  • 30 gram salad oil
  • 70 gram glutinous rice flour
  • 30 gram fried white sesame seeds
  • 40 gram melon sugar
  • As required Water and Lard Dough
  • 100 gram medium gluten flour
  • 50 gram Warm Water
  • 25 gram Lard

  • STEP 1.1 first prepare the glutinous rice filling and prepare the melon candy.

  • STEP 22.22 take one of the pieces, roll into a ball and flatten. Place a small portion of the filling in the middle.

  • STEP 23.23 wrap the dough around the fillings, and place the pinched side down

  • STEP 24.24 continue this for the rest of the portions

step 25

  • STEP 25.25 brush the top with an egg-wash, sprinkle with sesame seeds, cut three slits in the surface layer of the cake.

  • STEP 26.26  bake at 180 degrees for 20 minutes. Cake is ready.
