West Lake Beef Soup Recipe

Easy, quick and famous chinese simple soup. West Lake Beef Soup is a fancier version of Simple Egg Drop Soup, but it's made with only whisked egg whites. Often used with the leftover yolks to make one of my favorite desserts, Mexican Chocolate Pots de Creme.

Ingredients for West Lake Beef Soup Recipe

  • 2 No.s ginger slices
  • As required Coriander
  • 150 gram Minced beef
  • 3 No.s Shiitake mushrooms soaked
  • 2 No.s Egg whites
  • 250 milliliter Chicken/conpoy soup
  • 1 liter Water
  • As required Beef marinade
  • 2 tablespoon Sugar
  • 1 teaspoon Ground black pepper
  • 1 tablespoon Soy Sauce
  • 1 teaspoon shaoxing wine
  • 2 teaspoon rice bran oil
  • 1 teaspoon sesame oil
  • 30 gram Potato starch
  • 20 milliliter Water

Directions: West Lake Beef Soup Recipe

step 1

  • STEP 1.Beef marinade mix 2 tsp sugar, 1 tsp ground black pepper, 1 tbsp soy sauce, 1 tsp shaoxing wine, 2 tsp rice bran oil, 1 tsp sesame oil on the beef. Mix lightly and keep aside.

step 2

  • STEP 1.Thickening mixture mix potato starch and water. Slice shiitake mushrooms and chop corinader and cut stalks and dice it. Beat one egg in a bowl until it is mixed well. Add stock water into a pot, add ginger and mushrooms.

  • STEP 1.Take the marinade minced beef in a bowl and add starch mixture in it. Add sesame oil in beef for smooth texture.

  • STEP 1.The soup is cooked in the bowl after 5 minutes, remove ginger pieces.

  • STEP 1.Now add some soup into the beef and mix well. Add the minced beef back into the soup after flavouring. Bring it to boil. Remove any white foam.

  • STEP 1.Now add the thickening mixture as well. Stir first and add on high heat.

  • STEP 1.Add salt to taste. Slowly add egg white soon after the salt.

  • STEP 1.Switch the heat off. Now add sesame oil, ground pepper and mix. Add diced coriander and serve immediately.
