Watermelon-Lime Pops With Chile Dipping Salt Recipe

Recipe By Southern Living

No other food evokes such vivid memories and childhood nostalgia like that of popsiclesour favorite summertime treat. Watermelon is already satisfying as a standalone snack, but when frozen and put on a stick, it tastes even better. We couldnt think of a better way to survive the dog days of summer without refreshing watermelon, so we doubled its cool-down power by freezing it. Instead of heading to the frozen foods aisle to buy those sticky-sweet ice pops, you can make your own hand-held, fruity treat to satisfy your sweet tooth cravings. When store-bought simply wont do, youll be grateful for this recipe, which uses fresh and unexpected ingredients to really amp up the sweet and salty flavor. Light, bright, and sweet, these make-ahead watermelon pops come together in just five minutes, after chilling overnight, of course. First, combine watermelon juice with lime juice and simple syrup. If you dont have any limes in the fridge, lemons make for a flavorful and citrusy substitute. Then pour into popsicle molds and freeze for at least four hours, until completely frozen. Thats it, just five minutes of prep time. And the weather isnt the only thing to bring the heat here, as weve created a dipping sauce made of sugar, salt, and chili powder for a little extra kick. If you prefer a more grown-up version to this classic, try infusing these pops with alcohol to make a boozy frozen dessert. Vodka and rum are your best bets to complement the sweet flavor of watermelon. Lastly, to unmold pops without messing up their shape, fill a pan or container with warm (not hot) water thats as tall as your mold. Quickly dip the mold into the pan until the pops loosen. This watermelon popsicle recipe is just what delicious summers are made of.
