Ghazpacho is spanish cold soup which is made of fruits, vegetables, and served cold. Its originated in the southern spain. There are many modern varieties of ghazpacho in different colour omitting tomatoes. Summer is full of fresh and juicy fruits like watermelon, oranges..i made my way of spanish cold soup with watermelon and orange.

Ingredients for Watermelon ghazpacho Recipe

  • 1 cup heaped chopped seedless watermelon
  • 1 tablespoon full basil/ sabza seeds
  • 1/2 medium sized tomato, chopped
  • 1/2 small beetroot peeled and grated
  • 1/2 fresh orange squeezed
  • 1/2 tablespoon extra virgin olive oil
  • 1/2 tablespoon Lemon juice
  • 1/2 handful mint leaves wash and chopped
  • 1/2 teaspoon apple cider vinegar
  • pinch cayenne pepper/ sweet pepper
  • As required Rock/ sea salt
  • 1/4 inch ginger, grated
  • As required FOR GARNISH
  • 1/2 English cucumber,peeled and chopped
