  • As required ½ cup roasted peanuts
  • As required ½ cup Almonds
  • As required ¼ cup sunflower seeds
  • 1/2 tbsp white sesame seeds
  • 4.50 nos – soft seedless dates
  • 1/2 tbsp grated jaggery
  • 1/4 tbsp Ghee
  • As required ½ tsp cardamom powder
  • As required A pinch of cinnamon powder
  • 1/4 tbsp desiccated coconut
  • As required for coating (optional)

  • STEP 1.Heat a heavy-bottomed pan over low heat. Then add in your peanuts, almonds, sunflower seeds, and sesame seeds separately or together, depending on the size of your pan. Dry-roast for 3–5 minutes, stirring frequently, until fragrant and lightly toasted. However, do not let the seeds darken too much.
  • STEP 2.Allow your roasted ingredients to cool slightly. Then transfer them to a food processor or mixer and pulse until they become a coarse, slightly grainy mixture. Avoid grinding them into a completely smooth powder, as a little texture makes the laddoos much more enjoyable.
  • STEP 3.If your dates are firm, then soak them in warm water for 5 minutes and drain thoroughly. Then add them to the mixer and pulse along with the nut mixture until everything starts clumping together.
  • STEP 4.Now, heat your ghee in the same pan over low heat. Add the grated jaggery along with a tablespoon of water. Stir gently but consistently until the jaggery melts into a thick syrup. There is no need to cook it to a hard-ball stage.
  • STEP 5.Time to add the ground date-nut mixture, as well as cardamom and cinnamon, to the pan. Mix thoroughly over low heat for 1–2 minutes, just until the mixture comes together and feels easy to shape.
  • STEP 6.Turn off the heat and let your mixture cool until it is warm but comfortable to handle. Then grease your palms with a tiny amount of ghee and divide the mixture into 10 equal portions. Roll each portion firmly between your palms to form neat laddoos.
  • STEP 7.Finally, roll the laddoos in desiccated coconut if desired. Leave them at room temperature for 15–20 minutes to firm up before serving.
  • STEP 8.Always store in an airtight container. They will keep at room temperature for 2–3 days or in the refrigerator for up to a week. Allow chilled laddoos to sit at room temperature briefly before serving for a softer texture.
