  • 3/4 tablespoon Vietnamese madras curry powder not indian madras curry powder
  • 0.13 teaspoon Black pepper
  • 1/4 teaspoon Turmeric
  • 1/4 teaspoon Salt
  • 1/2 Bay leaves
  • 2.50 inch Oz sweet potatoes cut into 1 s
  • 1/4 inch Lb carrots cut into s
  • 2.50 inch Oz potatoes cut into 1 s. i use yukon gold
  • As required Oil to shallow fry
  • 1/2 pound Chicken skinless, bone-in. i like a mix of thighs and drumsticks
  • 1/4 cup Shallots diced
  • 3/4 Stalks lemongrass cut in 0. 5
  • 1 Cloves garlic minced
  • 1/4 inch Ginger minced as fine as you can get it
  • 3/4 tablespoon Fish sauce start with 2 and decide if you want more
  • 3/4 cup Chicken stock no sodium
  • 0.38 cup Coconut milk
  • 1 tablespoon Vegetable oil you need this much oil to bloom the spices. they will stick or worse, burn if you cut back
