Vermicelli Pulao Step by Step – A vermicelli preparation loaded with vegetables, having the flavors of cumin seeds, whole spices, etc.; is semiya pulao. Vermicelli can be prepared in many ways. I remember my friend used to get the most basic vermicelli preparation for school. Her mom used to cook semiya in a tempering of ghee and carom seeds along with spices such as salt, red chili powder, turmeric powder, etc. My mom would always make it with tomatoes and spices. All the recipes had their flavors and tasted yum. This recipe is a bit different. Vermicelli is cooked and thereafter combined with onions, tomatoes and lots of vegetables. It has the kick of lemon juice and sharpness of ginger, garam masala powder, etc. Sevai pulao can be served as breakfast or even as a light lunch or dinner.

  • As Required To boil vermicelli
  • 1/4 cup 1 cup roasted vermicelli
  • 1/2 cup 2 cup water
  • to taste Salt
  • 0.13 tsp ½ tsp turmeric powder
  • 1/4 tsp Oil
  • As Required To boil vegetables
  • 1/4 cup water
  • to taste Salt
  • 0.07 cup 1/3 cup each chopped carrots beans and peas
  • As Required To make Semiya Pulao
  • 1/4 tbsp Oil
  • 1/4 tsp Cumin seeds (Jeera)
  • 1/2 g Cloves (Laung)
  • 0.13 inch ½ inch cinnamon stick (dalchini
  • 1/4 Pieces 1 black cardamom (badi elaichi)
  • 1/4 g 1 medium-sized onion sliced
  • 1/4 g 1 medium sized tomatoes purees
  • 1/4 tsp Ginger paste
  • 1/4 tsp Red chili powder
  • 0.13 tsp ½ tsp garam madala
  • 1/4 Pieces Juice of lemon
  • As Required For Ganishing Chopped coriander leaves for garnish

Directions: Vermicelli Pulao | Semiya Pulao | Sevai Pulao Recipe (winter breakfast)

  • STEP 1.To boil vermicelli:
  • STEP 2.In a pan add 2 cups of water.
  • STEP 3.Add salt to taste.
  • STEP 4.Add in 1 tsp of oil.
  • STEP 5.Let it come to a boil.
  • STEP 6.Add 1 cup roasted vermicelli (semiya).
  • STEP 7.Also add ½ tsp turmeric powder.
  • STEP 8.Mix well.
  • STEP 9.Cover and let it cook on low flame.
  • STEP 10.Cook till the water is completely absorbed
  • STEP 11.To boil vegetables:
  • STEP 12.Boil 1 cup of water.
  • STEP 13.Add salt to taste.
  • STEP 14.Add 1/3 cup each chopped carrots, french beans, and peas.
  • STEP 15.Cook for 5 minutes.
  • STEP 16.Drain the water and keep the vegetable aside for now.
  • STEP 17.To make Vermicelli Pulao:
  • STEP 18.Heat 1 tbsp of oil.
  • STEP 19.Add 1 tsp cumin seeds (jeera). Let it crackle.
  • STEP 20.Add 2 cloves (laung), 1 black cardamom (badi elaichi) and ½ inch cinnamon stick (dal chini). Cook for 1 minute.
  • STEP 21.Add 1 sliced onion. Cook till onions are soft and translucent.
  • STEP 22.Add 1 pureed tomato.
  • STEP 23.Cook till the oil oozes.
  • STEP 24.Add 1 tsp ginger paste.
  • STEP 25.Cook for a minute.
  • STEP 26.Add boiled vermicelli.
  • STEP 27.Add in 1 tsp red chili powder. Cook for 2 minutes.
  • STEP 28.Add boiled vegetables.
  • STEP 29.Mix everything well.
  • STEP 30.Cover and cook for 2 minutes.
  • STEP 31.Finish off with ½ tsp garam masala and add lemon juice. Garnish with chopped coriander leaves.
  • STEP 32.Serve hot. Bon appetite!
