A homemade version of the popular Vegetable sweet corn soup, a delicately flavoured vegetable broth that has carrots, corn kernels, and beans. Corn is rich in fiber and plant compounds that may aid digestive and eye health. Yet, it's high in starch, can spike blood sugar and may prevent weight loss when consumed in excess. The safety of genetically modified corn may also be a concern. Still, in moderation, corn can be part of a healthy diet.

Ingredients for Vegetarian Sweet Corn Soup Recipe

  • 4 cup Vegetable Stock
  • 2 tablespoon Corn flour
  • As required Salt
  • 1 teaspoon Pepper powder
  • 1 tin Cream Style Corn
  • 1/4 cup Carrots finely chopped
  • 1/4 cup Green beans finely chopped
  • 1/4 cup Sweet corn
  • 2 tablespoon Spring onion greens , finely chopped

Directions: Vegetarian Sweet Corn Soup Recipe

step 1

  • STEP 1.Dissolve 2 tbsp corn flour into 6 cups vegetable stock. Stir well until no lumps remain. Set aside.

  • STEP 1.In a heavy bottom saucepan add ½ cup cream style corn and 4 cups of the vegetable stock. Add ¼ cup finely chopped carrots, ¼ cup finely chopped beans, ¼ cup steamed corn, salt to taste. Stir well till all the cream style corn is well combined into the stock.

  • STEP 1.After a few minutes on high heat the soup will begin to boil. Allow to boil for 3 to 4 minutes and turn the heat to low.

  • STEP 1.Cover the pan and simmer for 15 minutes, stirring occasionally. Then add 1 tsp black pepper powder and chopped green/ spring onion leaves.

  • STEP 1.Stir to combine well. Soup is ready to be served. Soya sauce or chilli vinegar can be added according to taste.
