Thai rice noodles tossed in vegetables and a sweet spicy tangy sauce. The Vegetarian Pad Thai is a simple and quick dish to make but is one of those dishes that has to be made fresh. The vegetables, sauces and noodles all stir fried on high heat gives the noodles the perfect texture and authenticity

Ingredients for Vegetarian Pad Thai Recipe

  • As required Ingredients for sauce
  • 1/2 cup Tamarind water
  • 2 tablespoon Sriracha sauce
  • 1/4 cup Soy sauce
  • 1/4 cup Brown sugar
  • As required Ingredients for Tempering
  • 4 No.s Garlic Cloves
  • As required Spring onions A few
  • 5 No.s Bokchoy
  • 1/2 cup Broccoli florets
  • 1 No.s Carrot
  • 1 No.s Onion
  • 1/2 cup Tofu
  • 1/2 cup Roasted peanuts
  • 1 No.s Green and red pepper
  • As required Fresh red chillies A few
  • As required Chopped coriander A few

Directions: Vegetarian Pad Thai Recipe

step 1

  • STEP 1.Partially cook 350 gms flat rice noodles and toss in a little oil.

step 2

  • STEP 2.1 to make the sauce, in a bowl add ½ cup tamarind water, 2 tbsp sriracha sauce, 1/4 soy sauce, ¼ cup brown sugar and mix well. Stir and allow the sugar to dissolve. Keep aside.

step 3

  • STEP 3.2 heat a wok and add 1 tbsp oil, add 3 to4 cloves chopped garlic, a few stalks of spring onions chopped and saute till the aromas of the garlic are released.

  • STEP 4.3 next add 4 to 5 chopped bok choy, ½ cup broccoli florets,1 sliced carrot, 1 sliced onion, 1 sliced green and red pepper. Add fresh red chillies as desired.

  • STEP 5.4 toss the vegetables and cook on high heat. Add salt to taste.

step 6

  • STEP 6.5 stir fry until the vegetables are cooked. They will wilt a little but still have crunch.

step 7

  • STEP 7.6 make a hole in the centre of the vegetables, add a little of the sauce mixture and stir. To this, add some of the cooked noodles and toss them together with the rest of the ingredients. If the wok is big enough add all the noodles at one time.

step 8

  • STEP 8.7 add some more noodles and sauce and toss them together.

step 9

  • STEP 9.8 cook on high heat all the while.

step 10

  • STEP 10.9 add ½ cup tofu and ½ cup roasted peanuts.

step 11

  • STEP 11.10 keep tossing the noodles till all the water and flavours are absorbed by the noodles and they are well coated. Use two spoons to easily toss and mix the pad thai.

step 12

  • STEP 12.11 check for salt and adjust. Turn off the heat. Sprinkle chopped coriander leaves.

step 13

  • STEP 13.12 vegetable pad thai is ready.
