As i can't have packet taco mixes, but love tex-mex, i have made this one up myself based on researching many different recipes and also common 'mexican' ingredients. One of my family's favourites.

Ingredients for Vegetarian Mexican Torta Recipe

  • 1/4 tablespoon Olive oil
  • 1/4 Onion, Diced
  • 1/2 Cloves Garlic, Crushed
  • 3/4 Medium carrots, diced
  • 0.13 Red capsicum, diced
  • 1.50 Mushrooms, Sliced
  • 1/2 teaspoon Ground Cumin
  • 1/2 teaspoon Ground coriander
  • As required Dried chilli
  • pinch Ground cloves
  • 100 gram 1 x can brown lentils
  • 1-1.50 drop Tabasco sauce
  • 100 gram 2 x cans peeled whole tomatoes
  • 0.06 teaspoon Oregano
  • 1/4 teaspoon Vegetable stock powder
  • 105 gram Red Kidney Beans
  • 1 Tortillas or any flat, round bread e. g. pita
  • 0.13 cup Cheese, Grated
  • 1/2 Spring onions, chopped
