A spicy one pot vegetable soup from the North East,made from palak (spinach), horseradish (mulli), radish greens and flavoured with garlic and blackpepper. Paape (hand rolled flat noodles) are cooked in the soup making it a wholesome meal.Thukpa is one among the popular noodle soups in India. Thukpa is actually a Tibetan Noodle Soup and according to Wiki, “It originated in the eastern part of Tibet. The dish became popular in Nepal, Bhutan, and the states of Sikkim, Assam, and Arunachal Pradesh in Northeast India. It is also popular in the Ladakh region and the state of Himachal Pradesh.”

Ingredients for Vegetable Thupka Soup Recipe

  • As required Ingredients for Paape
  • 2 cup Whole Wheat Flour
  • 1 No.s Egg
  • As required Salt
  • 1 cup Water for kneading
  • As required Ingredients for Thupka soup
  • 2 tablespoon Mustard oil
  • 1 No.s Onion, finely chopped
  • 4 No.s Garlic cloves, crushed
  • 2 No.s Tomatoes, finely chopped
  • 2 No.s Medium radish, diced
  • 1 bunch Palak, chopped
  • 1 teaspoon Black peppercorns, coarsely pounded
  • 1 teaspoon Roasted cumin powder
  • 1/2 teaspoon Garam masala powder
  • 2 cup Water
  • As required Ingredients for garnish
  • 1 No.s Lemon juice
  • As required Chopped coriander leaves A few
  • As required Crushed black peppercorns A few

Directions: Vegetable Thupka Soup Recipe

step 1

  • STEP 1.in a large saucepan add 2 tbsp mustard oil, 1 onion finely chopped. Saute till onions are soft. Then add 3 to4 cloves crushed garlic. Saute till garlic is soft and lightly brown.

step 2

  • STEP 1.add 2 tomatoes finely chopped and saute till tomatoes soften. Then add 2 diced medium radish and saute for a few seconds.

  • STEP 1.at this stage at 1 bunch chopped palak, 1 tsp coarsely pounded black peppercorns, 1 tsp roasted cumin (jeera) powder, ½ tsp garam masala powder.

  • STEP 1.4)add 2 cups of water and cover the pan. Allow it to simmer to make a vegetable stock.

step 5

  • STEP 2.5)to make the paape, in a mixing bowl add 2 cups whole wheat flour, 1 egg, salt to taste and a little water. Mix together and knead to make a soft smooth dough. divide the dough into two portions.

  • STEP 3.6)dust a flat surface and roll out the dough into thin sheets. Dust the dough with flour while rolling. When the sheet of dough is very thin, cut it into bite size pieces.

  • STEP 4.7)in the simmering pot of soup, slip in the pieces of rolled dough.

step 8

  • STEP 5.8)increase the heat to medium and allow the dough to cook in the soup for 3 to 4 minutes. Check for salt and add accordingly

step 9

  • STEP 6.9)reduce the flame and add juice of 1 lemon, chopped coriander, and crushed black peppercorns.

step 10

  • STEP 7.10)vegetable thupka is ready.
