A recipe of fried rice loaded with vegetables made in bengai style.Pulao or pilaf, is comfort food at its best and I make it when I want to cook something quick, easy and satisfying. This one-pot dish made with rice and vegetables has added spices and herbs, giving it a mild aromatic flavor. This special recipe is my mom’s and is my go-to recipe when making veg pulao. The dish is also vegetarian and is great on its own or paired with raita (an Indian yogurt dish), pickle and roasted papad (a crisp thin Indian snack).

Ingredients for Vegetable Pulao Recipe

  • 300 gram basmati rice
  • 100 gram Carrots
  • 100 gram Beans
  • 50 gram Peas
  • 4 piece bay leaves
  • 1 stick Cinnamon
  • 4 piece Cardamom
  • 4 piece Cloves
  • 25 gram cashew nuts
  • 25 gram Raisins
  • 6 piece green chillies
  • 1/2 teaspoon Peppercorns
  • 1/2 teaspoon garam masala powder
  • 16 gram Salt
  • 26 gram Sugar
  • 10 gram Ghee
  • 15 gram vegetable oil

Directions: Vegetable Pulao Recipe

  • STEP 1.Boil the rice till 90% is done and Strain and spread them to dry

  • STEP 1.Cut and wash the vegetables and Crush the pepper

  • STEP 2.Crush the pepper

  • STEP 1.Combine pepper,garam masala,salt and sugar & Heat a pan with vegetable oil and ghee

  • STEP 3.Heat a pan with vegetable oil and ghee

  • STEP 4.Temper with bay leaves,cloves,cardamom,cinnamon and cashew nuts

  • STEP 5.Add carrots and mix well to fry

  • STEP 6.Add beans and mix well

step 10

  • STEP 7.Add peas and raisins

step 11

  • STEP 8.Add the cooked rice and turn off the flame

step 12

  • STEP 9.Add the pre seasoning mixture

step 13

  • STEP 10.Add green chilies and mix up

step 14

  • STEP 11.Turn the heat back on and steam for 20mins

step 15

  • STEP 12.Serve as a main course
