  • 50 gram Thin rice noodles
  • 75 gram Mixed oriental mushrooms , such as oyster, shitake and enoki, cleaned
  • 1/2 Cloves of garlic
  • 1/4 Fresh red chilli
  • 1.25 centimeter Piece of ginger
  • 50 gram Courgettes
  • 0.13 bunch Fresh coriander
  • 1.50 Spring onions
  • As required Groundnut oil , or vegetable oil
  • 1/4 teaspoon Cornflour
  • 1/2 tablespoon Low salt soy sauce
  • 1/4 tablespoon Agave syrup
  • 1/4 teaspoon Seasame oil
  • 0.13 tablespoon Rice wine , or dry sherry
  • 25 gram Baby spinach
  • 1/2 Limes , to serve
