A vegetarian pan fried kebab made from chickpea, potato and paneer and flavoured with spices.The Vegetarian Shami Kebab Recipe is also popularly known as the Chane Ke Kebab is a very simple recipe to make and it's wholesome too. The kebabs are packed with proteins from the chickpeas and flavored with fennel and chaat masala. You can make these kebabs with either kala chana (dark brown chickpeas) or the kabuli chana (regular chickpeas), either ways you get a great texture and taste. You can also make the kebab dough ahead and pan fry them when you are ready to serve them for parties.

Ingredients for Veg Shami Kebab Recipe

  • 1 cup Kabuli chana
  • 2 Potatoes boiled peeled and mashed Nos
  • 2 tablespoon Gram flour
  • 1 inch Ginger grated
  • 1 tablespoon Fennel seeds
  • 1 teaspoon Chaat masala powder
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Red chilli powder
  • bunch Small coriander leaves chopped
  • As required Salt
  • As required Oil For Frying

Directions: Veg Shami Kebab Recipe

step 1

  • STEP 1.1 in a food processor add 1 cup cooked kabuli chana, small bunch of chopped coriander leaves, 1 tbsp fennel seeds, 1 inch piece of ginger chopped. Use pulse mode to make a coarse mixture. Do not blend to a smooth mixture.

  • STEP 2.2 in a large mixing bowl and the coarse chana dal mixture, add 1 onion chopped finely, 2 boiled peeled and mashed potatoes, 2 tbsp gram flour, ½ tsp roasted cumin powder, 1 tsp chaat masala, ½ tsp red chilli powder, salt to taste.

  • STEP 3.3 mix all the ingredients together well till they are well combined and almost like a dough. Check for salt and seasoning and adjust accordingly.

  • STEP 4.4 portion the dough and press and shape into thick discs.

  • STEP 5.5 preheat a pan, place the kebabs on the hot pan and drizzle a little oil over the kebabs. Let them cook on medium heat, one side and then flip them over to cook on the other side. Add a little more oil if required. Cook till the kebab gets a crisp crust. This takes about 7 to 10 minutes. Flip them over intermittently so that they brown evenly on both sides.

  • STEP 6.6 serve on a platter with onion rings and lemon wedges.
