Enchilada is the past participle of Spanish enchilar, "to add chili pepper to"; literally, "to season with chili". It is basically a corn tortilla stuffed with vegetables or meat.Vegetable Enchiladas: cheesy vegetarian enchiladas are stuffed with tons of vegetables and are wrapped in a flavorful five minute homemade enchilada sauce!

Ingredients for Veg Enchilada Recipe

  • 2 teaspoon Oil
  • 4 tablespoon Butter
  • 2 tablespoon All purpose flour
  • 1 teaspoon grated garlic
  • 2 cup Tomato Puree
  • 2 cup Water
  • 1 teaspoon roasted cumin
  • 1.50 teaspoon chilli flakes
  • 2 teaspoon mixed herbs
  • As required Salt
  • 1 teaspoon Brown Sugar
  • 1/2 finely chopped onions
  • 1/2 cup Capsicum
  • 1/2 cup orange bell pepper
  • 1/2 cup red bell pepper
  • 1 finely chopped tomato
  • 1/2 cup boiled sweet corn
  • 1 tablespoon Garlic
  • 1 teaspoon roasted cumin seeds
  • 1 cup boiled kidney beans
  • 1/4 cup fresh coriander leaves
  • 8 No.s whole wheat chapatis

Directions: Veg Enchilada Recipe

step 1

  • STEP 1.In a pan put oil, butter, flour and roast it on medium flame for 2 to 3 minutes.

  • STEP 1. Now add garlic, tomato puree, 2 cups of water, roasted cumin, chili flakes, herbs and salt.

  • STEP 1.3. Mix well, cover with the lid and cook for 5 to 6 minutes.

  • STEP 1.Add a little brown sugar and mix the sauce well.

  • STEP 1.Take an oil bath and chopped onions in a pan. Saute this for 3 to 4 minutes.

  • STEP 1.Add capsicum, orange bell pepper, boiled sweet corn, garlic, roasted cumin seeds, mixed herbs, chili flakes, salt and boiled kidney beans.

  • STEP 1.Mix all the ingredients well and cover the pan. Let it cook at medium flame for 5 to 6 minutes.

  • STEP 1.Add kidney beans and add fresh coriander leaves to the vegetable stuffing.

  • STEP 1.Take whole wheat chapatis and put vegetable stuffing on it.

  • STEP 1.Add cheese and roll the chapatis.

  • STEP 1.Take a baking tray and spread some sauce.

  • STEP 1.Place the rolls in the tray and cover them with sauce.

  • STEP 1.Garnish the rolls with some cheese, olives and bell pepper.

  • STEP 1.Bake in a preheated oven at 180° celsius for 15 to 18 minutes.
